Ingredients

  • 3 cups all-purpose flour
  • 3/4 cup whole milk, warmed
  • 2 tsp active dry yeast
  • 1/4 cup granulated sugar
  • 3 tbsp unsalted butter, softened
  • 2 large eggs
  • 1/2 tsp kosher salt
  • 1 tsp lemon zest
  • 1/2 cup plum butter (Powidl)
  • 1/4 cup unsalted butter, melted
  • 2 tbsp powdered sugar

Instructions

  1. 1

Warm 3/4 cup warmed whole milk until lukewarm, about 110°F. Whisk in 2 tsp active dry yeast and half of 1/4 cup granulated sugar. Let stand 5 minutes until foamy.

  2. 2

In a large bowl, mix 3 cups all-purpose flour, the remaining granulated sugar, 1/2 tsp kosher salt, and 1 tsp lemon zest. Add the yeast mixture, 2 large eggs, and 3 tbsp softened unsalted butter.

  3. 3

Knead 8 minutes, until smooth and elastic. Cover and let rise in a warm place about 1 hour, until doubled.

  4. 4

Divide the dough into 12 equal balls. Press each ball flat and spoon an equal share of 1/2 cup plum butter (Powidl) into the center.

  5. 5

Pinch the dough closed around the filling. Set each ball seam side down in a 9x13-inch baking pan brushed with some of 1/4 cup unsalted butter. Cover and let rise 30 minutes.

  6. 6

Heat the oven to 350°F. Brush the tops with the remaining unsalted butter. Bake 25 to 30 minutes, until deep golden.

  7. 7

Check the center bun with an instant-read thermometer. It should read about 190°F.

  8. 8

Cool 5 minutes, then dust with 2 tbsp powdered sugar. Serve warm, pulled apart.

Questions

What oven temperature does Buchteln need?

For Buchteln, the oven is set to 350 F (about 175 C) in step 6. The longest stretch at that heat is 30 minutes, in step 6.

What equipment do I need for Buchteln?

Beyond a knife and a board, the method uses a probe thermometer (step 7) and a 9x13 baking dish (step 5).

Is there a substitute for yeast in Buchteln?

The entry for Buchteln calls for 2 tsp active dry yeast. In its place: Instant and active dry yeast swap measure for measure. Active dry wants five minutes in warm liquid first, while instant goes straight into the flour.

Can I make Buchteln gluten-free?

Yes. The gluten in Buchteln is 3 cups all-purpose flour. Swap the flour for a 1-to-1 gluten-free baking blend (where it only thickens a sauce, half as much cornstarch also works). Everything else proceeds as written.

Is Buchteln vegan?

No, though it is vegetarian. What keeps it from vegan is 3/4 cup whole milk, warmed, 3 tbsp unsalted butter, softened, 1/2 cup plum butter (Powidl) and 1/4 cup unsalted butter, melted. For fully plant-based entries, see the vegan dessert collection.

Can I start Buchteln the day before?

Yes. Step 3 is a built-in pause of 1 hour: "Cover and let rise in a warm place about 1 hour, until doubled." Do everything up to that point ahead of time and pick up at step 4 when you are ready to finish.
