Caramel Cake
A tender yellow cake layered with rich homemade cooked caramel icing. It is a traditional dessert popular for special occasions.
Ingredients
- 3 cups all-purpose flour, sifted
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 2 tsp vanilla extract
- 1 cup whole milk
- 1/2 cup unsalted butter, cubed
- 2 cups packed brown sugar
- 2/3 cup heavy cream

Preheat oven to 350 degrees F and grease two 9 inch round cake pans.

Whisk together 3 cups sifted all-purpose flour, 2 tsp baking powder, and 1/2 tsp salt in a bowl.

Beat 1 cup softened unsalted butter and 2 cups granulated sugar together until light and fluffy.

Add 4 large eggs one at a time, then mix in 2 tsp vanilla extract.

Alternately fold in the flour mixture and 1 cup whole milk until smooth.

Divide batter between pans and bake for 25 to 30 minutes, then cool completely.

Combine 1/2 cup cubed unsalted butter, 2 cups packed brown sugar, and 2/3 cup heavy cream in a saucepan over medium heat.

Bring icing to a boil, stir constantly for 3 minutes, remove from heat, and cool slightly until thickened.

Spread icing between cooled cake layers and over the top and sides.
