Chopped Italian Grinder Sandwich
Deli meats, provolone, and a vinegar dressed shredded lettuce salad chopped fine together, then packed into a crusty roll, the deli sandwich trend built for one even bite in every mouthful.
Ingredients
- 4 Italian sub rolls, split
- 6 oz sliced Genoa salami, chopped
- 6 oz sliced deli ham, chopped
- 6 oz sliced provolone cheese, chopped
- 2 cups iceberg lettuce, shredded
- 1 tomato, diced
- 1/4 cup red onion, finely diced
- 1/4 cup sliced banana peppers, chopped
- 2 tbsp red wine vinegar
- 1/4 cup olive oil
- 1/2 tsp dried oregano
- 1/4 tsp salt

In a large bowl, toss 2 cups shredded iceberg lettuce, 1 diced tomato, 1/4 cup finely diced red onion, and 1/4 cup chopped sliced banana peppers with 2 tbsp red wine vinegar, 1/4 cup olive oil, 1/2 tsp dried oregano, and 1/4 tsp salt until evenly coated.

Add 6 oz chopped sliced Genoa salami, 6 oz chopped sliced deli ham, and 6 oz chopped sliced provolone cheese to the bowl and chop everything together with a large knife or kitchen shears until finely and evenly mixed.

Split 4 split Italian sub rolls lengthwise and scoop out a little of the soft interior to make room for the filling.

Pile the chopped mixture into the rolls, pressing gently to pack it in, then slice each sandwich in half to serve.
