Ingredients
- 2 boneless, skinless chicken breasts, about 8 oz each, halved horizontally to make 4 cutlets
- 1 tsp salt
- 1/2 tsp black pepper, freshly ground
- 2 large eggs, beaten
- 1/2 cup all-purpose flour
- 1 cup Italian seasoned breadcrumbs
- 1/2 cup grated Parmesan cheese, for breading
- 1/4 cup olive oil, for frying
- 2 cups marinara sauce, homemade or store-bought
- 1 cup mozzarella cheese, shredded
- 1/4 cup grated Parmesan cheese, for topping
- 2 tbsp fresh basil leaves, chopped or torn
- 8 oz spaghetti
- 1/2 tsp garlic powder
- 1/2 tsp Italian seasoning
Instructions
-
1
Preheat oven to 425°F (220°C).
-
2
Place 2 about 8 oz each, halved horizontally to make 4 cutlets boneless, skinless chicken breasts between two pieces of plastic wrap and pound to an even 1/4-inch thickness. Season both sides with 1 tsp salt, 1/2 tsp freshly ground black pepper, 1/2 tsp garlic powder, and 1/2 tsp Italian seasoning.
-
3
Set up a breading station with three shallow dishes: one with 1/2 cup all-purpose flour, one with 2 beaten large eggs, and one with a mixture of 1 cup Italian seasoned breadcrumbs and 1/2 cup for breading grated Parmesan cheese.
-
4
Dredge each chicken piece in flour, shaking off excess, then dip in egg, and finally coat with the breadcrumb-Parmesan mixture, pressing gently to adhere.
-
5
In a large oven-safe skillet, heat 1/4 cup for frying olive oil over medium-high heat. Once hot, add the breaded chicken and cook until golden brown, about 2-3 minutes per side. The chicken will not be fully cooked at this point.
-
6
Pour 2 cups homemade or store-bought marinara sauce around (not on top of) the chicken in the skillet. Alternatively, transfer the chicken to a baking dish and pour sauce around it.
-
7
Sprinkle 1 cup shredded mozzarella cheese over each chicken piece, followed by the 1/4 cup for topping grated Parmesan cheese.
-
8
Bake in the preheated oven until the cheese is melted and bubbly and the chicken is cooked through to an internal temperature of 165°F (74°C), about 15-20 minutes.
-
9
Meanwhile, cook 8 oz spaghetti according to package instructions. Drain and toss with a little olive oil or some extra marinara sauce.
-
10
Serve the chicken Parmesan over spaghetti, garnished with 2 tbsp chopped or torn fresh basil leaves.
