Crispy Chile Lime Chicken
Pan-seared chicken thighs with a spiced chile and lime crust, tender and juicy inside. A trending Southwestern favorite that's restaurant-quality and weeknight-easy.
Ingredients
- 2 lbs boneless, skinless chicken thighs, patted dry
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 2 tbsp fresh lime juice
- 2 tbsp fresh cilantro, chopped

In a small bowl, combine 1 tsp chili powder, 1/2 tsp cumin, 1/2 tsp garlic powder, 1 tsp kosher salt, and 1/2 tsp black pepper.

Pat 2 lbs patted dry boneless, skinless chicken thighs dry with paper towels. Rub the spice mixture evenly all over the chicken, coating both sides.

Heat 2 tbsp olive oil in a large skillet over medium-high heat. Once shimmering, carefully add the chicken.

Cook for 6-7 minutes per side until the internal temperature reaches 165°F on an instant-read thermometer. Do not move the chicken too much - let it develop a crust.

Transfer chicken to a plate. Squeeze 2 tbsp fresh lime juice over the warm chicken and sprinkle with 2 tbsp chopped fresh cilantro.
