Cuban Cauliflower Salad
Tender cauliflower florets tossed warm in a garlicky citrus dressing with sliced red onion and fresh parsley.
Ingredients
- 1 head cauliflower florets, chopped
- 1/4 cup extra virgin olive oil
- 3 tbsp fresh lime juice
- 2 garlic cloves, minced
- 1/2 cup red onion, thinly sliced
- 2 tbsp fresh parsley, finely chopped
- 1/2 tsp salt
- 1/4 tsp black pepper

Bring a large pot of salted water to a boil and cook 1 head chopped cauliflower florets for 5 minutes until tender-crisp.

Whisk 1/4 cup extra virgin olive oil, 3 tbsp fresh lime juice, 2 minced garlic cloves, 1/2 tsp salt, and 1/4 tsp black pepper in a small bowl until emulsified.

Drain cauliflower thoroughly and transfer to a serving bowl while still warm.

Add 1/2 cup thinly sliced red onion and 2 tbsp finely chopped fresh parsley to the bowl.

Pour the dressing over cauliflower and toss well to combine.
