Cucumber Lime Aam Panna Cooler
Aam panna is a traditional Indian summer drink made from raw green mango cooked with sugar and cooling spices. This version blends it with fresh cucumber and lime for an extra-refreshing cooler that fights the heat on the hottest days. Plan ahead: allow the mango pulp to cool completely before blending.
Ingredients
- 2 raw green mangoes (unripe), peeled, halved
- 1/3 cup granulated sugar
- 2 cups water (for cooking mango)
- 1/2 tsp ground cumin (roasted)
- 1/2 tsp black salt (kala namak; substitute regular salt)
- 1 English cucumber, peeled, chopped
- 2 tbsp fresh lime juice
- 15 leaves fresh mint leaves
- 2 cups cold water (to dilute)
- as needed ice cubes

Place 2 peeled, halved raw green mangoes (unripe) in a saucepan with 2 cups water (for cooking mango). Bring to a boil over medium-high heat, then reduce to a simmer. Cook for 15 to 20 minutes until the mango flesh is completely soft and the skin separates easily.

Remove the mango from the water. When cool enough to handle, scrape all the cooked pulp away from the pits and skin. Discard the skin and pits.

Transfer the mango pulp to a blender. Add 1/3 cup granulated sugar, 1/2 tsp ground cumin (roasted), 1/2 tsp black salt (kala namak; substitute regular salt), 1 peeled, chopped English cucumber, 2 tbsp fresh lime juice, and 15 leaves fresh mint leaves. Blend on high speed until completely smooth.

Add 2 cups cold water (to dilute) and blend again briefly to combine. Taste and adjust sweetness with more granulated sugar or tanginess with more fresh lime juice.

Pour over as needed ice cubes in tall glasses and serve immediately. Garnish with an extra sprig of mint if desired.
