Ingredients

  • 1 large ripe avocado, pitted, peeled
  • 1 lemon, zested, juiced
  • 1 clove garlic clove, minced
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp fresh mint leaves
  • 1/2 tsp kosher salt
  • 1/4 tsp red pepper flakes
  • 16 slices whole-grain baguette, 1/2" slices
  • 4 radishes, thinly sliced

Instructions

    Preheat broiler to high (or preheat oven to 425°F). Arrange 16 slices 1/2" slices whole-grain baguette on a baking sheet, brush lightly with a little extra-virgin olive oil, and toast under the broiler for 2 to 3 minutes per side until golden and crisp.

    In a food processor or blender, combine 1 cup thawed frozen shelled edamame, 1 large pitted, peeled ripe avocado, zested, juiced lemon juice and zest, 1 clove minced garlic clove, 2 tbsp extra-virgin olive oil, 2 tbsp fresh mint leaves, 1/2 tsp kosher salt, and 1/4 tsp red pepper flakes. Pulse until mostly smooth with some texture.

    Taste and adjust seasoning with additional salt or lemon juice as needed.

    Spread a generous spoonful of the edamame-avocado smash onto each toasted baguette slice.
