Ingredients

  • 4 slices sandwich bread
  • 4 eggs
  • 2 tbsp milk
  • 1/4 tsp salt
  • 2 tsp unsalted butter
  • 1/4 cup pizza sauce
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 tsp italian seasoning

Instructions

    In a shallow bowl, whisk together the 4 eggs, 2 tbsp milk, and 1/4 tsp salt until well combined.

    Melt the 2 tsp unsalted butter in a nonstick skillet over medium heat, tilting to coat the bottom.

    Dip each slice of 4 slices sandwich bread into the egg mixture, coating both sides, then arrange the slices in the skillet, edges overlapping slightly, to form one solid layer that fills the pan. Pour any remaining egg mixture over the top to fill in the gaps.

    Cook undisturbed until the bottom is set and lightly golden, about 3 to 4 minutes.

    Slide the egg-bread base onto a large plate, then invert it back into the skillet to cook the other side. Cook 2 to 3 minutes more, until fully set with no runny egg remaining.

    Spread the 1/4 cup pizza sauce evenly over the top and sprinkle with the 1/2 tsp italian seasoning and 1/2 cup shredded mozzarella cheese.

    Cover the skillet, reduce the heat to low, and cook until the cheese is fully melted, about 3 to 4 minutes.
