Egg and Tuna Brik
A classic North African crispy fried pastry envelope stuffed with savory tuna, capers, fresh herbs, and a soft-cooked egg.
Ingredients
- 1 can canned tuna in oil, drained
- 1/4 cup flat-leaf parsley, chopped
- 2 tbsp capers, drained
- 2 tsp harissa paste
- 4 phyllo pastry sheets, thawed
- 4 large eggs
- 1 cup vegetable oil
- 4 lemon wedges

In a bowl, combine 1 can drained canned tuna in oil, 1/4 cup chopped flat-leaf parsley, 2 tbsp drained capers, and 2 tsp harissa paste.

Heat 1 cup vegetable oil in a large skillet over medium-high heat.

Lay a sheet of 4 thawed phyllo pastry sheets on a plate, place a portion of the tuna mixture in the center, and make a shallow well.

Crack 4 large eggs into the center of the well.

Fold the pastry over to form a triangle, press edges lightly to seal, and carefully slide into the hot oil.

Fry for 1 to 2 minutes per side until golden brown and crispy while keeping the yolk runny.

Drain on paper towels and serve hot with 4 lemon wedges.
