Fish Tagine with Charmoula
Tender white fish simmered over a bed of spiced vegetables in a vibrant, herb-packed charmoula sauce.
Ingredients
- 2 lbs white fish fillets, cut into chunks
- 1 cup fresh cilantro, chopped
- 1/2 cup fresh flat-leaf parsley, chopped
- 4 garlic cloves, minced
- 1/4 cup fresh lemon juice
- 1/4 cup extra virgin olive oil
- 1 tsp ground cumin
- 1 tsp sweet paprika
- 4 plum tomatoes, sliced
- 2 carrots, sliced
- 1 red bell pepper, sliced
- 1 tsp salt

In a bowl, mix 1 cup chopped fresh cilantro, 1/2 cup chopped fresh flat-leaf parsley, 4 minced garlic cloves, 1/4 cup fresh lemon juice, half of the 1/4 cup extra virgin olive oil, 1 tsp ground cumin, 1 tsp sweet paprika, and 1 tsp salt to make the charmoula.

Coat 2 lbs cut into chunks white fish fillets with half of the charmoula marinade and let sit for 15 minutes.

Layer 2 sliced carrots, 1 sliced red bell pepper, and 4 sliced plum tomatoes in the bottom of a tagine or heavy skillet with remaining 1/4 cup extra virgin olive oil.

Place marinated 2 lbs cut into chunks white fish fillets on top of the vegetable layer and spoon remaining charmoula sauce over top.

Cover and simmer on low heat for 20 to 25 minutes until vegetables are tender and fish reaches an internal temperature of 145°F.
