Moroccan Mint Tea

A traditional North African ceremonial green tea brewed with fresh spearmint and sweetened generously with sugar, poured from height to create a characteristic froth.

Ingredients

  • 2 tbsp Chinese gunpowder green tea
  • 1 bunch fresh spearmint sprigs
  • 1/4 cup granulated sugar
  • 4 cups water

Instructions

    Bring 4 cups water to a boil in a small teapot or saucepan.

    Add 2 tbsp Chinese gunpowder green tea to the pot and let steep for 1 minute. Carefully pour off and discard this first brew to rinse the tea leaves.

    Add boiling water back to the pot along with 1/4 cup granulated sugar and the 1 bunch fresh spearmint sprigs sprigs. Simmer over low heat for 3 to 4 minutes.

    Pour a glass of tea and return it back to the pot to mix; repeat two or three times to fully blend the flavors.

    Pour the tea into small glasses from a height of about 12 inches to create a light froth. Serve immediately, garnished with an extra sprig of fresh spearmint sprigs.
