Frijoles Puertorriquenos
Puerto Rican stewed beans with sofrito, tomatoes, and ham in a savory broth, a classic side dish with rich flavors that complements nearly every meal.
Ingredients
- 3 cans canned beans, drained
- 2 tbsp olive oil
- 4 tbsp sofrito
- 1/2 onion, diced
- 2 garlic, minced
- 1 can diced tomatoes
- 4 oz ham, diced
- 1/4 cup tomato sauce
- 1 cup chicken broth
- 1/2 tsp oregano
- 1/4 tsp cumin

- to taste pepper

Heat 2 tbsp olive oil in a pot over medium heat.

Add 4 tbsp sofrito, 1/2 diced onion, and 2 minced garlic. Sauté 2 min.

Stir in 1/4 cup tomato sauce and 1 can diced tomatoes. Cook 2 min.

Add 3 cans drained canned beans, 4 oz diced ham, 1 cup chicken broth, 1/2 tsp oregano, 1/4 tsp cumin.

Bring to boil, reduce heat and simmer 30-40 minutes.

Broth reduces by half, beans become tender.
