Instructions

    Heat 4 tbsp olive oil in a large heavy pot over medium-high heat. Brown 4 lbs cut into 2-inch pieces oxtail in batches, about 5-7 minutes per side. Set aside.

    In the same pot, sauté 1 diced onion, 4 minced garlic cloves, and 1 diced bell pepper until softened, about 5 minutes.

    Stir in 4 tbsp sofrito and 1 tsp dried oregano. Cook for 1 minute until fragrant.

    Add 1 28oz can diced tomatoes (canned) and 1 cup tomato sauce. Stir well to combine.
