Grilled Halloumi with Watermelon
Salty, golden-seared halloumi cheese paired with sweet chilled watermelon, fresh mint, and a drizzle of honey and balsamic — a stunning summer appetizer ready in minutes.
Ingredients
- 8 oz halloumi cheese, sliced 1/2-in thick
- 4 cups seedless watermelon, cubed or sliced
- 2 tbsp extra-virgin olive oil
- 2 tsp honey
- 2 tsp balsamic glaze (store-bought or reduced)
- 2 tbsp fresh mint leaves, torn
- 1/4 tsp black pepper, freshly ground
- 1/8 tsp red pepper flakes

Pat 8 oz sliced 1/2-in thick halloumi cheese dry with a paper towel and brush lightly with 2 tbsp extra-virgin olive oil on both sides.

Preheat the grill or a grill pan to medium-high heat. Grill the halloumi for 2–3 minutes per side until deep golden grill marks appear. Do not move the slices until they release easily.

Arrange 4 cups cubed or sliced seedless watermelon on a serving platter. Place the warm halloumi slices over the watermelon.

Drizzle everything with 2 tsp honey and 2 tsp balsamic glaze (store-bought or reduced).

Scatter 2 tbsp torn fresh mint leaves over the top and finish with 1/4 tsp freshly ground black pepper and 1/8 tsp red pepper flakes. Serve immediately.
