Ingredients

  • 2 cups buckwheat groats (kasha), toasted
  • 3 cups water
  • 1/2 tsp salt
  • 2 tbsp butter
  • 1/2 onion, thinly sliced
  • 1 bay leaf
  • 1/4 tsp black pepper
  • 4 oz mushroom (optional), sliced

Instructions

  1. 1

Heat 1 tablespoon of 2 tbsp butter in a medium saucepan over medium heat. Add 1/2 thinly sliced onion and cook for 8-10 minutes, stirring occasionally, until caramelized and golden brown. Transfer to a plate and set aside.

  2. 2

In the same pan, add the 2 cups toasted buckwheat groats (kasha) and stir for 1-2 minutes until you hear a gentle crackling sound, which indicates it's being toasted.

  3. 3

Add 3 cups water, 1/2 tsp salt, and 1 bay leaf to the pan. Bring to a boil, then reduce heat to low and cover.

  4. 4

Simmer for 12-15 minutes until the buckwheat is tender and the water is absorbed. Do not stir during cooking.

  5. 5

Remove from heat and let sit covered for 5 minutes.

  6. 6

Fluff with a fork and transfer to a serving bowl.

  7. 7

Top with the caramelized onions and 4 oz sliced mushroom (optional) if using.

  8. 8

Drizzle with remaining butter and season with 1/4 tsp black pepper. Serve hot.

Questions

Can I make Kasha Buckwheat dairy-free?

Yes. The dairy in this entry is 2 tbsp butter. Swap the butter for olive oil where it melts, or a plant-based block butter where it is creamed. The richness shifts slightly, but the method does not change.

How long does Kasha Buckwheat keep?

Refrigerate leftovers within two hours and eat them within three days. Reheat gently on the stovetop.

Can I halve or double Kasha Buckwheat?

Yes. As written it serves 4. Every ingredient in this entry carries precomputed half and double quantities, and the app's batch dial rewrites them inside each step. When doubling on the stovetop, use your widest pan or work in two batches so the food sears instead of steaming.
