Questions

What is Knyshi?

Knyshi are Ukrainian baked pastries made from a sour cream dough wrapped around a seasoned mashed potato and onion filling. They are eaten warm as a snack or with soup. Plan ahead: chill the dough 30 minutes before rolling. This reference files it under Ukrainian appetizer: made in the oven, rated medium and about 70 minutes start to finish.

What oven temperature does Knyshi need?

For Knyshi, the oven is set to 375 F (about 190 C) in step 5. The longest stretch at that heat is 25 minutes, in step 5.

Is there a substitute for sour cream in Knyshi?

The entry for Knyshi calls for 1 cup sour cream. In its place: Full-fat plain Greek yogurt, measure for measure. In hot sauces, add it off the heat.

Can I make Knyshi gluten-free?

Yes. The gluten in Knyshi is 2 1/2 cups all-purpose flour. Swap the flour for a 1-to-1 gluten-free baking blend (where it only thickens a sauce, half as much cornstarch also works). Everything else proceeds as written.

Does Knyshi contain eggs?

Yes: 2 large eggs, beaten. The full allergen list for this entry is gluten, dairy and eggs. Packaged ingredients vary by brand, so check labels if the allergy is serious.

Can I start Knyshi the day before?

Yes. Step 1 is a built-in pause of 30 minutes: "Wrap and chill 30 minutes." Do everything up to that point ahead of time and pick up at step 2 when you are ready to finish.
