  • 4 tilapia fillets, patted dry
  • 3 tbsp unsalted butter, melted
  • 4 garlic cloves, minced
  • 2 lemon, half juiced, half sliced thinly
  • 2 tbsp fresh parsley, chopped
  • 1/2 tsp dried oregano
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper, freshly ground
  • 1 tbsp olive oil
  • 1 cup cherry tomatoes (optional), halved
  • 1 tbsp capers (optional), drained

    Preheat oven to 400°F (200°C).

    Lightly grease a baking dish with 1 tbsp olive oil.

    In a small bowl, combine 3 tbsp melted unsalted butter, 4 minced garlic cloves, juice from half of the 2 half juiced, half sliced thinly lemon, 2 tbsp chopped fresh parsley (reserving some for garnish), 1/2 tsp dried oregano, 1/2 tsp paprika, 1/2 tsp salt, and 1/4 tsp freshly ground black pepper.

    Place 4 patted dry tilapia fillets in the prepared baking dish and pour the butter mixture evenly over the fillets.

    If using, scatter 1 cup halved cherry tomatoes (optional) and 1 tbsp drained capers (optional) around the fish.

    Top with the thin lemon slices from the remaining half lemon.

    Bake in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork and is opaque throughout.
