Mediterranean Salmon with Herbs
Pan-seared salmon fillets topped with a bright Mediterranean herb mixture and served with lemon. A trending dinner that's elegant, healthy, and on the table in under 30 minutes.
Ingredients
- 1.5 lbs salmon fillets (skin-on), patted dry
- 3 tbsp olive oil
- 1/4 tsp salt
- 1/8 tsp black pepper
- 2 tbsp fresh dill, chopped
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh oregano, chopped
- 2 garlic cloves, minced
- 1 tbsp lemon zest
- 1/2 lemon, sliced
- 2 tbsp capers (drained)

In a small bowl, combine 2 tbsp chopped fresh dill, 2 tbsp chopped fresh parsley, 1 tbsp chopped fresh oregano, 2 minced garlic cloves, and 1 tbsp lemon zest. Set aside.

Pat 1.5 lbs patted dry salmon fillets (skin-on) dry with paper towels and season both sides with 1/4 tsp salt and 1/8 tsp black pepper.

Heat 3 tbsp olive oil in a large skillet over medium-high heat until shimmering.

Place salmon skin-side down in the hot oil. Cook for 5-6 minutes without moving, until the skin is crispy and golden.

Flip the salmon and cook for another 3-4 minutes until the flesh is opaque and cooked through. Check internal temperature - salmon should reach 145 degrees F.

Top each salmon fillet with the herb mixture and 2 tbsp capers (drained).

Serve immediately with 1/2 sliced lemon for squeezing over the top.
