Palacinta
Hungarian sweet crepes filled with jam, chocolate, or ground walnuts and rolled elegantly. A classic breakfast treat that doubles as a stunning dessert.
Ingredients
- 2 large eggs
- 1/2 cup all-purpose flour
- 1 cup whole milk
- 1/4 tsp salt
- 1 tsp granulated sugar
- 1 tbsp melted butter
- 1 tbsp butter (for cooking)
- 1/2 cup fruit jam or preserves (apricot, plum, or raspberry)
- 2 tbsp powdered sugar (for dusting)

In a blender or mixing bowl, combine 2 large eggs, 1 cup whole milk, 1/2 cup all-purpose flour, 1/4 tsp salt, 1 tsp granulated sugar, and 1 tbsp melted butter. Blend or whisk until smooth batter forms. Let rest 5-10 minutes.

Heat a nonstick skillet or crepe pan over medium-high heat. Lightly butter with 1 tbsp butter (for cooking).

Pour about 1/4 cup batter into the center and immediately tilt the pan in a circular motion to spread thinly and evenly. Cook until the bottom is golden, about 1-2 minutes.

Flip carefully and cook the other side for about 30 seconds to 1 minute until set.

Transfer to a plate. Repeat with remaining batter, stacking crepes as you go.

Warm 1/2 cup fruit jam or preserves (apricot, plum, or raspberry) slightly if desired. Spread a spoonful of jam down the center of each crepe and roll tightly or fold into quarters.

Arrange on a serving plate and dust generously with 2 tbsp powdered sugar (for dusting).
