Triple Cooked Chips
Thick cut potato chips parboiled and double fried for an extra crispy exterior and fluffy interior. A classic British pub staple served with sea salt.
Ingredients
- 3 lbs Russet potatoes, sliced thick
- 8 cups sunflower oil
- 2 tsp flaky sea salt
Instructions

Place 3 lbs sliced thick Russet potatoes into a pot of cold salted water and simmer until tender, about 10 minutes.

Drain potatoes carefully and let cool on a wire rack.

Heat 8 cups sunflower oil in a deep pot to 260 degrees F.

Fry potatoes in small batches for 5 minutes without browning, then drain and cool.

Increase oil heat to 350 degrees F.

Fry potatoes a second time for 4 to 5 minutes until crisp and golden brown.

Drain on paper towels and toss with 2 tsp flaky sea salt before serving.
