Pineapple Coconut Smoothie
A tropical blended drink combining sweet pineapple and creamy coconut milk for a sunny, dairy-free refresher. Frozen pineapple gives it a thick, icy texture without added ice.
Ingredients
- 2 cups frozen pineapple chunks, frozen
- 1 cup full-fat coconut milk (canned)
- 1 ripe banana, frozen, sliced
- 2 tbsp fresh lime juice
- 2 tsp honey or agave syrup
- 2 tbsp toasted shredded coconut (for garnish), toasted

Add 2 cups frozen frozen pineapple chunks, 1 frozen, sliced ripe banana, 1 cup full-fat coconut milk (canned), 2 tbsp fresh lime juice, and 2 tsp honey or agave syrup to a blender.

Blend on high speed for 60 seconds until completely smooth and creamy. If the mixture is too thick, add a splash of water and blend again.

Taste and adjust sweetness with more sweetener if desired.

Pour into glasses and garnish with 2 tbsp toasted toasted shredded coconut (for garnish). Serve immediately.
