Ingredients

  • 2 cups frozen pineapple chunks, frozen
  • 1 cup full-fat coconut milk (canned)
  • 1 ripe banana, frozen, sliced
  • 2 tbsp fresh lime juice
  • 2 tsp honey or agave syrup
  • 2 tbsp toasted shredded coconut (for garnish), toasted

Instructions

    Add 2 cups frozen frozen pineapple chunks, 1 frozen, sliced ripe banana, 1 cup full-fat coconut milk (canned), 2 tbsp fresh lime juice, and 2 tsp honey or agave syrup to a blender.

    Blend on high speed for 60 seconds until completely smooth and creamy. If the mixture is too thick, add a splash of water and blend again.

    Taste and adjust sweetness with more sweetener if desired.

    Pour into glasses and garnish with 2 tbsp toasted toasted shredded coconut (for garnish). Serve immediately.
