Simple Creamy Potato Soup
This comforting potato soup features tender potato chunks and sautéed onion in a light, milky broth, with a hint of melted butter. It's a simple, classic recipe reminiscent of old-fashioned home cooking.
Ingredients
- 4 tbsp unsalted butter
- 1 medium yellow onion, diced
- 3 lbs Yukon Gold potatoes, peeled, diced
- 4 cups chicken broth
- 3 cups whole milk
- 1 tsp kosher salt
- 1/2 tsp black pepper, ground
- 2 tbsp fresh parsley, chopped

Melt 4 tbsp unsalted butter in a large pot or Dutch oven over medium heat.

Add 1 medium diced yellow onion and cook, stirring occasionally, until softened and translucent, about 5-7 minutes.

Add 3 lbs peeled, diced Yukon Gold potatoes, 4 cups chicken broth, 1 tsp kosher salt, and 1/2 tsp ground black pepper to the pot. Bring to a boil, then reduce heat to a simmer.
