Ingredients

  • 1 lb lean ground beef (85/15)
  • 8 strips bacon strips, cooked, crumbled
  • 8 oz cream cheese, softened, cubed
  • 1/2 cup sour cream
  • 2 cups sharp cheddar cheese, shredded
  • 1 can canned diced tomatoes with green chiles (such as Rotel), drained
  • 2 tsp yellow mustard
  • 2 tsp gluten-free Worcestershire sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper

Instructions

  1. 1

Cook the 1 lb lean ground beef (85/15) in a skillet over medium-high heat, breaking it apart, until browned and cooked through to 160°F (71°C). Drain excess fat. Season with 1/2 tsp kosher salt, 1/2 tsp black pepper, 1/2 tsp garlic powder, and 1/2 tsp onion powder.

  2. 2

Transfer the cooked lean ground beef (85/15) to the slow cooker. Add the 8 oz softened, cubed cream cheese, 1/2 cup sour cream, half the 2 cups shredded sharp cheddar cheese, 1 can drained canned diced tomatoes with green chiles (such as Rotel), 2 tsp yellow mustard, 2 tsp gluten-free Worcestershire sauce, and most of the 8 strips cooked, crumbled bacon strips (reserve a small amount for garnish). Stir to combine.

  3. 3

Cover and cook on LOW for 2 hours (or HIGH for 1 hour), stirring once halfway through, until the cream cheese is fully melted and the dip is bubbly.

  4. 4

Sprinkle the remaining sharp cheddar cheese and reserved bacon strips on top. Serve hot directly from the slow cooker with tortilla chips, crackers, or sliced vegetables for dipping.
