Skillet Cookie for Two
A gooey chocolate chip cookie baked in a mini cast iron skillet and eaten straight from the pan with a spoon, the format behind the viral cookie tin trend.
Ingredients
- 1/4 cup unsalted butter, melted
- 1/4 cup brown sugar
- 2 tbsp granulated sugar
- 1 egg yolk
- 1/2 tsp vanilla extract
- 1/2 cup all-purpose flour
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup semisweet chocolate chips
- pinch flaky sea salt

Preheat oven to 350°F. Butter two 5-inch mini cast iron skillets, or one 8-inch skillet.

In a bowl, whisk 1/4 cup melted unsalted butter, 1/4 cup brown sugar, and 2 tbsp granulated sugar until smooth. Whisk in 1 egg yolk and 1/2 tsp vanilla extract.

Stir in 1/2 cup all-purpose flour, 1/4 tsp baking soda, and 1/4 tsp salt until just combined, then fold in 1/2 cup semisweet chocolate chips.

Press the dough into the prepared skillet or skillets in an even layer.

Bake 12 to 15 minutes, until the edges are set and golden but the center still looks slightly underbaked.

Sprinkle with pinch flaky sea salt and let cool 5 minutes before digging in with a spoon.
