Rice Water
A soothing traditional beverage made by gently boiling white rice with citrus peel, then straining and lightly sweetening.
Ingredients
- 1/2 cup long grain white rice, rinsed
- 5 cups water
- 2 strips lemon peel
- 2 tbsp granulated sugar
- 1/4 tsp fine sea salt

Combine 1/2 cup rinsed long grain white rice, 5 cups water, and 2 strips lemon peel in a saucepan.

Bring to a boil over medium-high heat, then reduce heat to low and simmer uncovered for 20 minutes.

Strain the hot liquid through a fine-mesh sieve into a pitcher, discarding solids.

Stir in 2 tbsp granulated sugar and 1/4 tsp fine sea salt until completely dissolved.
