Slow Cooker Sausage and Peppers
Italian sausage links slow-cooked with colorful bell peppers and onions in a savory tomato sauce — a low-carb dinner that is equally at home on its own or stuffed in a roll.
Ingredients
- 8 links Italian pork sausage links (sweet or hot)
- 2 red bell pepper, sliced
- 2 green bell pepper, sliced
- 2 medium yellow onion, sliced into rings
- 4 cloves garlic cloves, minced
- 1 can canned diced tomatoes, drained
- 2 tbsp tomato paste
- 2 tsp Italian seasoning
- 1/2 tsp fennel seeds
- 1/2 tsp red pepper flakes
- 1 tsp kosher salt
- 2 tbsp olive oil

Heat 2 tbsp olive oil in a large skillet over medium-high heat. Brown the 8 links Italian pork sausage links (sweet or hot) on all sides, about 4 minutes total. Transfer to the slow cooker.

In the slow cooker, layer the 2 medium sliced into rings yellow onion, 2 sliced red bell pepper, and 2 sliced green bell pepper over and around the Italian pork sausage links (sweet or hot).

In a small bowl, mix together the 1 can drained canned diced tomatoes, 2 tbsp tomato paste, 4 cloves minced garlic cloves, 2 tsp Italian seasoning, 1/2 tsp fennel seeds, 1/2 tsp red pepper flakes, and 1 tsp kosher salt. Pour over the vegetables.

Cook on LOW for 6 hours (or HIGH for 3-4 hours), until the Italian pork sausage links (sweet or hot) reaches an internal temperature of 160°F (71°C) and the peppers are tender.

Taste and adjust seasoning. Serve as is for a low-carb meal, or place in rolls.
