Ingredients

  • 8 links Italian pork sausage links (sweet or hot)
  • 2 red bell pepper, sliced
  • 2 green bell pepper, sliced
  • 2 medium yellow onion, sliced into rings
  • 4 cloves garlic cloves, minced
  • 1 can canned diced tomatoes, drained
  • 2 tbsp tomato paste
  • 2 tsp Italian seasoning
  • 1/2 tsp fennel seeds
  • 1/2 tsp red pepper flakes
  • 1 tsp kosher salt
  • 2 tbsp olive oil

Instructions

    Heat 2 tbsp olive oil in a large skillet over medium-high heat. Brown the 8 links Italian pork sausage links (sweet or hot) on all sides, about 4 minutes total. Transfer to the slow cooker.

    In the slow cooker, layer the 2 medium sliced into rings yellow onion, 2 sliced red bell pepper, and 2 sliced green bell pepper over and around the Italian pork sausage links (sweet or hot).

    In a small bowl, mix together the 1 can drained canned diced tomatoes, 2 tbsp tomato paste, 4 cloves minced garlic cloves, 2 tsp Italian seasoning, 1/2 tsp fennel seeds, 1/2 tsp red pepper flakes, and 1 tsp kosher salt. Pour over the vegetables.

    Cook on LOW for 6 hours (or HIGH for 3-4 hours), until the Italian pork sausage links (sweet or hot) reaches an internal temperature of 160°F (71°C) and the peppers are tender.
