Stuffed Peppers
Bell peppers filled with seasoned ground beef and rice, baked until tender in a spiced tomato sauce.
Ingredients
- 4 lg bell peppers (any color), tops cut off and seeded
- 1 lb ground beef
- 1/2 cup uncooked white rice
- 1/2 med onion, diced
- 2 garlic cloves, minced
- 1 can tomato sauce (15 oz can)
- 1/2 cup water
- 1/4 tsp ground cumin
- 1/8 tsp ground cinnamon
- 1/4 tsp paprika
- 1/4 tsp salt
- 1/8 tsp black pepper
- 2 tbsp fresh parsley, chopped

Preheat oven to 375°F. Cut the tops off the 4 lg tops cut off and seeded bell peppers (any color) and remove the seeds and membranes.

In a large bowl, combine 1 lb ground beef, 1/2 cup uncooked white rice, 1/2 med diced onion, 2 minced garlic cloves, 1/4 tsp ground cumin, 1/8 tsp ground cinnamon, 1/4 tsp paprika, 1/4 tsp salt, 1/8 tsp black pepper, and 2 tbsp chopped fresh parsley.

Stuff each pepper with the beef and rice mixture, packing it in gently.

In a baking dish large enough to fit the peppers, mix 1 can tomato sauce (15 oz can) and 1/2 cup water together.

Stand the stuffed peppers upright in the sauce.

Cover the baking dish with foil and bake for 35-40 minutes until the peppers are tender and the rice is cooked through.

Remove the foil and bake uncovered for an additional 5 minutes.

Transfer to a serving platter and pour the sauce over the peppers. Let cool for 2-3 minutes before serving.
