Dukkah
A fragrant Egyptian condiment of toasted nuts, seeds, and warm spices coarsely ground together. Excellent served with crusty bread and olive oil for dipping.
Ingredients
- 1 cup raw hazelnuts
- 1/2 cup white sesame seeds
- 1/4 cup whole coriander seeds
- 2 tbsp whole cumin seeds
- 1 tsp whole black peppercorns
- 1 tsp fine sea salt

Toast 1 cup raw hazelnuts in a dry skillet over medium heat until fragrant, then rub off loose skins and cool.

In the same skillet, toast 1/4 cup whole coriander seeds, 2 tbsp whole cumin seeds, and 1 tsp whole black peppercorns until warm and aromatic.

Toast 1/2 cup white sesame seeds separately in the skillet until golden brown.

Combine the spices, 1 cup raw hazelnuts, 1/2 cup white sesame seeds, and 1 tsp fine sea salt in a food processor or mortar.

Pulse until coarsely ground, taking care not to create a paste.
