Taameya
Traditional Egyptian fava bean falafel blended with fresh green herbs and warm spices, then fried until golden and crispy.
Ingredients
- 2 cups dried split fava beans, soaked
- 4 scallions, chopped
- 1/2 cup fresh cilantro, chopped
- 1/2 cup fresh parsley, chopped
- 4 garlic cloves, minced
- 1 tsp ground coriander
- 1/2 tsp ground cumin
- 1/2 tsp baking powder
- 1 tsp salt
- 2 cups vegetable oil

Place 2 cups soaked dried split fava beans, 4 chopped scallions, 1/2 cup chopped fresh cilantro, 1/2 cup chopped fresh parsley, and 4 minced garlic cloves in a food processor or blender.

Process until a finely ground, soft dough forms, scraping down the sides as needed.

Transfer the mixture to a bowl and fold in 1 tsp ground coriander, 1/2 tsp ground cumin, 1/2 tsp baking powder, and 1 tsp salt.

Heat 2 cups vegetable oil in a heavy skillet over medium-high heat until hot.

Form the dough into flat patties and carefully lower them into the hot oil.

Fry for 3 to 4 minutes per side until deep golden brown and crispy, then drain on paper towels before serving.
