Tuna Cucumber Protein Bites

Ingredients
- 10 oz canned tuna in water, drained well
- 2 English cucumber, sliced 1/2-in thick
- 1/4 cup mayonnaise
- 2 tsp Dijon mustard
- 2 tsp fresh lemon juice
- 1/4 cup red onion, finely diced
- 2 tbsp capers, drained, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 tsp salt
- 1/4 tsp black pepper, freshly ground
- 1/4 tsp paprika

In a bowl, combine 10 oz drained well canned tuna in water, 1/4 cup mayonnaise, 2 tsp Dijon mustard, 2 tsp fresh lemon juice, 1/4 cup finely diced red onion, 2 tbsp drained, chopped capers, and 1/4 cup chopped fresh parsley. Season with 1/4 tsp salt and 1/4 tsp freshly ground black pepper. Mix until well combined.

Arrange 2 sliced 1/2-in thick English cucumber slices in a single layer on a serving platter.

Spoon about 1 teaspoon of the tuna mixture onto each cucumber round. Dust with 1/4 tsp paprika and serve immediately.
