  • 2 English cucumber, sliced 1/2-in thick
  • 1/4 cup mayonnaise
  • 2 tsp Dijon mustard
  • 2 tsp fresh lemon juice
  • 1/4 cup red onion, finely diced
  • 2 tbsp capers, drained, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 tsp salt
  • 1/4 tsp black pepper, freshly ground
  • 1/4 tsp paprika

Instructions

    In a bowl, combine 10 oz drained well canned tuna in water, 1/4 cup mayonnaise, 2 tsp Dijon mustard, 2 tsp fresh lemon juice, 1/4 cup finely diced red onion, 2 tbsp drained, chopped capers, and 1/4 cup chopped fresh parsley. Season with 1/4 tsp salt and 1/4 tsp freshly ground black pepper. Mix until well combined.

    Arrange 2 sliced 1/2-in thick English cucumber slices in a single layer on a serving platter.
