Ingredients

  • 1 English cucumber, grated
  • 2 garlic cloves, minced
  • 1/4 cup fresh dill, chopped
  • 2 tbsp fresh lemon juice
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp kosher salt
  • 2 tbsp fresh mint leaves, chopped

    Place 1 grated English cucumber in a clean kitchen towel and squeeze out as much liquid as possible.

    In a medium bowl, combine 2 cups full-fat Greek yogurt, drained cucumber, 2 minced garlic cloves, 1/4 cup chopped fresh dill, 2 tbsp chopped fresh mint leaves, 2 tbsp fresh lemon juice, and 2 tbsp extra virgin olive oil.

    Season with 1/2 tsp kosher salt and stir until well combined.
