Uova in Purgatorio
Poached eggs nestled in a spicy, garlic infused tomato sauce. Finish with grated cheese and fresh basil for a rustic meal.
Ingredients
- 2 tbsp extra-virgin olive oil
- 4 garlic cloves, minced
- 1/2 tsp crushed red pepper flakes
- 28 oz crushed tomatoes
- 1/2 tsp fine sea salt
- 1/4 tsp black pepper, ground
- 4 large eggs
- 1/4 cup Parmesan cheese, grated
- 1/4 cup fresh basil, torn

Heat 2 tbsp extra-virgin olive oil in a large skillet over medium heat.

Add 4 minced garlic cloves and 1/2 tsp crushed red pepper flakes, sauteing for 1 minute until fragrant.

Pour in 28 oz crushed tomatoes, season with 1/2 tsp fine sea salt and 1/4 tsp ground black pepper, and simmer for 10 minutes until slightly thickened.

Make four small wells in the tomato sauce and gently crack 4 large eggs into each well.

Cover the skillet and cook over medium-low heat for 5 to 8 minutes until whites are set and yolks remain runny.

Remove from heat and garnish with 1/4 cup grated Parmesan cheese and 1/4 cup torn fresh basil before serving.
