Chlodnik
A refreshing cold Polish soup of beets, buttermilk, and fresh cucumbers, served chilled on warm summer days. The vibrant pink color and tangy flavor make it a uniquely Polish refreshment.
Ingredients
- 4 medium cooked beets, diced
- 3 cup buttermilk
- 2/3 cup sour cream
- 1 medium cucumber, diced
- 6 radishes, thinly sliced
- 2 green onions, chopped
- 2 tbsp fresh dill, chopped
- 1 tbsp lemon juice
- 0.5 tsp salt
- 0.25 tsp black pepper
- 2 cup cold vegetable broth

In a large bowl, whisk together 3 cup buttermilk and 2/3 cup sour cream until smooth and creamy.

Stir in 2 cup cold vegetable broth, 1 tbsp lemon juice, 0.5 tsp salt, and 0.25 tsp black pepper.

Add the 4 medium diced cooked beets, 1 medium diced cucumber, 6 thinly sliced radishes, and 2 chopped green onions.

Gently fold in 2 tbsp chopped fresh dill and mix well.

Cover and refrigerate for at least 1 hour before serving. The soup can also be prepared up to 4 hours ahead.

Stir gently before serving to ensure even distribution of ingredients.

Ladle into chilled bowls and serve immediately. Optionally top with a dollop of sour cream and an extra sprinkle of dill.
