Spicy Bellflower Root Salad
A traditional Korean side dish of crunchy bellflower root tossed in a spicy, sweet, and tangy garlic dressing.
Ingredients
- 1 lb hydrated bellflower root, shredded
- 2 tbsp coarse sea salt
- 2 tbsp Korean red pepper flakes
- 1 tbsp granulated sugar
- 2 tbsp rice vinegar
- 2 garlic cloves, minced
- 2 stems scallion, sliced
- 1 tsp toasted sesame oil
- 2 tsp toasted sesame seeds

Rub 1 lb shredded hydrated bellflower root vigorously with 2 tbsp coarse sea salt for 2 to 3 minutes to draw out bitterness, then rinse thoroughly under cold water and drain.

Squeeze out all excess moisture from the rinsed hydrated bellflower root using a clean kitchen towel.

In a medium bowl, combine 2 tbsp Korean red pepper flakes, 1 tbsp granulated sugar, 2 tbsp rice vinegar, 2 minced garlic cloves, 2 stems sliced scallion, and 1 tsp toasted sesame oil to create a seasoning paste.

Add the prepared hydrated bellflower root to the bowl and mix well by hand until evenly coated.

Sprinkle with 2 tsp toasted sesame seeds before serving cold or at room temperature.
