Apple Cinnamon Oatmeal Bake
A hearty breakfast casserole combining rolled oats, fresh apples, and warm spices for a nutritious start to your day.
Ingredients
- 2 cups rolled oats
- 1 tsp baking powder
- 1 tbsp ground cinnamon
- 1/2 tsp salt
- 2 medium apples, diced (preferably Honeycrisp or Granny Smith)
- 1 1/2 cups milk, (dairy or plant-based)
- 1/4 cup maple syrup
- 2 eggs, lightly beaten
- 1 tsp vanilla extract
- 3 tbsp unsalted butter, melted
- 1/4 cup brown sugar, packed

Preheat oven to 350°F (175°C). Grease an 8x8 inch (20x20 cm) baking dish.

In a large bowl, combine 2 cups rolled oats, 1 tsp baking powder, 1 tbsp ground cinnamon, and 1/2 tsp salt.

Add 2 diced (preferably Honeycrisp or Granny Smith) medium apples to the oat mixture and stir to combine.

In a separate bowl, whisk together 1 1/2 cups (dairy or plant-based) milk, 1/4 cup maple syrup, 2 lightly beaten eggs, 1 tsp vanilla extract, and 3 tbsp melted unsalted butter.

Pour the wet ingredients over the oat mixture and stir until well combined.

Transfer the mixture to the prepared baking dish and spread evenly.

Sprinkle 1/4 cup packed brown sugar over the top.

Bake for 35-40 minutes, until the top is golden and the oatmeal is set.
