Kunun Zaki
A traditional West African spiced millet beverage with a naturally sweet and tangy finish. Served chilled for a refreshing, restorative drink.
Ingredients
- 2 cups millet grains, soaked
- 2 tbsp fresh ginger, chopped
- 1 tsp whole cloves
- 1/2 cup sweet potato, peeled
- 6 cups water
- 1/4 cup granulated sugar

Rinse 2 cups soaked millet grains thoroughly and drain well.

Blend 2 cups soaked millet grains, 2 tbsp chopped fresh ginger, 1 tsp whole cloves, and 1/2 cup peeled sweet potato with a splash of cold water into a smooth paste.

Divide the paste into two equal portions in separate bowls.

Boil half of the remaining 6 cups water and pour it over one portion, stirring constantly until it thickens into a porridge.

Allow the hot mixture to cool slightly, then stir in the remaining uncooked paste and remaining cold water.

Stir in 1/4 cup granulated sugar until dissolved, then strain through a fine mesh cloth and chill before serving.
