Banh Xeo
Crispy Vietnamese rice flour crepes filled with seared pork belly, shrimp, and fresh bean sprouts.
Ingredients
- 1.5 cups rice flour
- 1/2 tsp ground turmeric
- 1/2 cup coconut milk
- 1.25 cups water
- 4 stalks scallions, thinly sliced
- 1/2 lb pork belly, thinly sliced
- 1/2 lb shrimp, peeled
- 2 cups bean sprouts, rinsed
- 1/4 cup vegetable oil

Whisk together 1.5 cups rice flour, 1/2 tsp ground turmeric, 1/2 cup coconut milk, 1.25 cups water, and 4 stalks thinly sliced scallions in a bowl until smooth, then rest the batter for 20 minutes.

Heat a portion of 1/4 cup vegetable oil in a skillet over medium-high heat, then sear 1/2 lb thinly sliced pork belly until cooked through to an internal temperature of 145°F.

Add 1/2 lb peeled shrimp and cook for 1 minute until turned opaque pink.

Ladle a portion of batter into the pan, swirling quickly to form a thin crepe.

Place 2 cups rinsed bean sprouts on one half, cover with a lid, and cook for 2 minutes until edges crisp.
