Beef Caldereta
A rich Filipino stew featuring tender beef simmered in a savory tomato sauce enriched with liver spread, bell peppers, and root vegetables.
Ingredients
- 2 lbs beef chuck roast, cubed
- 2 tbsp cooking oil
- 4 garlic cloves, minced
- 1 yellow onion, chopped
- 1 cup tomato sauce
- 1/2 cup liver spread
- 2 cups beef broth
- 2 russet potatoes, cubed
- 2 carrots, sliced
- 1 red bell pepper, chopped
- 1/2 cup pitted green olives

Heat 2 tbsp cooking oil in a large Dutch oven over medium-high heat.

Add 2 lbs cubed beef chuck roast and sear on all sides until browned, then remove beef and set aside.

In the same pot, sauté 1 chopped yellow onion and 4 minced garlic cloves until soft and aromatic.

Return beef to the pot, then stir in 1 cup tomato sauce, 1/2 cup liver spread, and 2 cups beef broth.

Bring to a boil, cover, reduce heat to low, and simmer for 60 minutes until beef is tender and reaches an internal temperature of at least 160 F.

Add 2 cubed russet potatoes and 2 sliced carrots, cover and simmer for another 15 minutes.

Stir in 1 chopped red bell pepper and 1/2 cup pitted green olives, simmering uncovered for 5 minutes until vegetables are tender and sauce thickens.
