Beef Fried Rice
Savory stir-fried rice with tender beef, eggs, and vegetables. A complete one-pan meal that comes together in minutes with day-old rice.
Ingredients
- 1 lb ground beef
- 2 tbsp vegetable oil
- 4 cups cooked white rice (day-old, chilled)
- 2 eggs, beaten
- 1 cup frozen peas
- 1/2 cup carrot, finely diced
- 2 garlic cloves, minced
- 2 tbsp soy sauce
- 1/2 tsp sesame oil
- 2 scallions, sliced

Heat 2 tbsp vegetable oil in a large wok over high heat. Add the 1 lb ground beef and cook until browned, breaking it up with a spoon, about 3-4 minutes. Transfer to a plate.

Add the 2 minced garlic cloves to the wok and cook for 30 seconds until fragrant.

Add the 4 cups cooked white rice (day-old, chilled), breaking up any clumps. Stir-fry for 3-4 minutes until heated through.

Push the rice to the sides of the wok. Pour the 2 beaten eggs into the center and scramble until cooked, then mix with the rice.

Add the 1 cup frozen peas, 1/2 cup finely diced carrot, and the cooked beef back to the wok. Toss well and cook for 1 minute.

Drizzle with 2 tbsp soy sauce and 1/2 tsp sesame oil, toss to combine. Garnish with 2 sliced scallions and serve hot.
