Black Sesame Soup
A comforting traditional Chinese sweet soup made from freshly toasted black sesame seeds and rice. It is blended into a silky smooth texture and lightly sweetened with rock sugar.
Ingredients
- 1 cup black sesame seeds
- 1/4 cup glutinous rice, soaked
- 3 cups water
- 1/4 cup rock sugar, crushed

Toast 1 cup black sesame seeds in a dry skillet over medium heat until fragrant, about 5 minutes, then let cool.

Combine the toasted black sesame seeds, 1/4 cup soaked glutinous rice, and 3 cups water in a high-speed blender and process until smooth.

Pour the blended mixture through a fine-mesh sieve into a saucepan.

Add 1/4 cup crushed rock sugar and stir over medium-low heat until the sugar dissolves and the soup thickens, about 8 to 10 minutes.

Ladle into warm bowls and serve immediately.
