Instructions

    Place 2 lbs chopped cleaned beef tripe and 1 lb halved pork trotter in a large pot, cover with water, bring to a boil for 5 minutes, then drain and rinse.

    Return 2 lbs chopped cleaned beef tripe and 1 lb halved pork trotter to the pot. Add 6 cups beef broth and 2 bay leaf, bringing to a boil, then reduce heat and simmer covered for 1.5 hours.

    Heat 2 tbsp olive oil in a skillet over medium heat. Sauté 1 diced yellow onion and 4 minced garlic cloves for 5 minutes until soft.

    Stir in 1/2 cup diced Serrano ham, 2 tsp sweet smoked paprika, 1/2 tsp spicy smoked paprika, and 2 tbsp tomato paste, cooking for 1 minute until fragrant.
