Horchata de Chufa

A traditional Valencian tiger nut milk drink that is naturally sweet, creamy, and dairy-free. Plan ahead: the tiger nuts must soak for at least 12 hours before blending.

Ingredients

  • 1 cup dried tiger nuts (chufa), soaked overnight
  • 4 cups cold water
  • 1/4 cup granulated sugar
  • 1 stick cinnamon stick
  • 1/2 tsp lemon zest
  • as needed ice cubes

Instructions

    Drain and rinse 1 cup soaked overnight dried tiger nuts (chufa). They should feel plump and tender.

    Place the tiger nuts in a blender with 4 cups cold water, 1/4 cup granulated sugar, 1/2 tsp lemon zest, and 1 stick cinnamon stick. Blend on high speed for 2 minutes until as smooth as possible.

    Strain the blended mixture through a fine-mesh sieve or cheesecloth into a pitcher, pressing firmly to extract all the liquid. Discard the pulp.

    Taste and adjust sweetness if needed. Refrigerate for at least 1 hour until thoroughly chilled.

    Serve over ice cubes in tall glasses. Dust lightly with ground cinnamon if desired.
