Charred Broccoli with Spiced Yogurt Dip

Ingredients
- 2.5 lbs fresh broccoli florets
- 3 tbsp olive oil
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 cup plain Greek yogurt
- 2 garlic cloves, minced
- 1/4 tsp ground cumin
- 1/4 tsp smoked paprika
- 2 tsp fresh lemon juice
- 2 tsp fresh parsley, chopped
- 2 tsp fresh mint, chopped

Make the yogurt dip first: in a small bowl, whisk together 1 cup plain Greek yogurt, 2 minced garlic cloves, 1/4 tsp ground cumin, 1/4 tsp smoked paprika, and 2 tsp fresh lemon juice. Stir in 2 tsp chopped fresh parsley and 2 tsp chopped fresh mint. Taste and adjust seasonings as needed. Set aside.

Heat 3 tbsp olive oil in a large skillet over medium-high heat until shimmering.

Add 2.5 lbs fresh broccoli florets in a single layer and let them cook undisturbed for 4-5 minutes to develop char on the bottoms.

Stir and continue cooking for another 5-7 minutes, tossing occasionally, until the broccoli is tender with charred, crispy edges.

Season with 1/4 tsp salt and 1/8 tsp black pepper to taste.
