Chlada Khodra
A traditional Moroccan composed vegetable salad featuring lightly boiled carrots, potatoes, green beans, and beets dressed in a zesty lemon herb vinaigrette.
Ingredients
- 2 cups Yukon Gold potatoes, diced
- 2 cups carrots, diced
- 1 cup green beans, trimmed
- 1 cup cooked beets, diced
- 3 tbsp extra virgin olive oil
- 2 tbsp lemon juice
- 2 tbsp fresh flat-leaf parsley, chopped
- 1/2 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper

Boil 2 cups diced Yukon Gold potatoes and 2 cups diced carrots in salted water for 10 to 12 minutes until tender, then drain and transfer to separate bowls.

Boil 1 cup trimmed green beans in salted water for 4 to 5 minutes until crisp-tender, then drain and cool.

Whisk together 3 tbsp extra virgin olive oil, 2 tbsp lemon juice, 2 tbsp chopped fresh flat-leaf parsley, 1/2 tsp ground cumin, 1/2 tsp salt, and 1/4 tsp black pepper in a small bowl.

Divide the dressing evenly over each prepared vegetable, including 1 cup diced cooked beets, and gently toss each bowl to combine.

Arrange each seasoned vegetable in distinct sections on a large platter and serve chilled or at room temperature.
