Ingredients

  • 4 tbsp unsalted butter
  • 6 cloves garlic cloves, minced
  • 4 sprigs fresh thyme sprigs
  • 1 tsp fresh rosemary, finely chopped
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 2 tbsp olive oil or avocado oil
  • 1/4 cup fresh flat-leaf parsley, chopped

    Pat 2 lbs cut into 1-inch cubes sirloin steak (or ribeye) completely dry with paper towels — this is critical for a good sear. Season generously all over with 1 tsp kosher salt and 1/2 tsp freshly ground black pepper.

    Heat a large cast-iron or heavy skillet over high heat until smoking. Add 2 tbsp olive oil or avocado oil and swirl to coat.

    Add the steak cubes in a single layer without crowding — work in two batches if needed. Sear undisturbed for 1 to 2 minutes until a deep brown crust forms, then toss and sear another 1 to 2 minutes. For medium-rare, the internal temperature should reach 130 to 135 degrees F (54 to 57 degrees C). Remove the steak and set aside on a plate.

    Reduce heat to medium. Add 4 tbsp unsalted butter, 6 cloves minced garlic cloves, 4 sprigs fresh thyme sprigs sprigs, and 1 tsp finely chopped fresh rosemary to the pan. Let the butter foam and the garlic sizzle for about 60 seconds, stirring so the garlic does not burn.

    Return the steak bites to the pan and toss for 30 seconds to coat thoroughly in the butter and herb mixture.

    Transfer to a serving platter, spoon any remaining garlic butter from the pan over the top, and garnish with 1/4 cup chopped fresh flat-leaf parsley. Serve immediately.
