Ingredients

  • 4 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 2 large egg, beaten
  • 1/3 cup evaporated milk
  • 1/2 tsp ground nutmeg
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 6 cups vegetable oil (for frying)

    In a large bowl, whisk together 4 cups all-purpose flour, 1/3 cup granulated sugar, 1 tsp baking powder, 1/2 tsp salt, and 1/2 tsp ground nutmeg.

    Rub 1/4 cup softened unsalted butter into the flour mixture with your fingertips until it resembles coarse crumbs.

    Add 2 beaten large egg and 1/3 cup evaporated milk and mix to form a firm dough. If too dry, add a teaspoon of water at a time. The dough should not stick to your hands.

    On a lightly floured surface, roll out the dough to about 1/4 inch thick. Cut into thin strips about 1/4 inch wide, then cut into small pieces about 1/2 inch long.

    Heat 6 cups vegetable oil (for frying) in a deep pot to 325°F (165°C). Fry dough pieces in small batches, stirring occasionally, until golden and crunchy, about 5-7 minutes per batch.
