Ewedu
A traditional Nigerian jute leaf soup featuring a uniquely silky texture and savory, earthy flavor profile. Typically enjoyed with gbegiri and stew alongside swallow dishes.
Ingredients
- 8 oz fresh jute leaves, rinsed
- 2 cups water
- 1/4 tsp baking soda
- 1 tbsp fermented locust beans, rinsed
- 1 tbsp ground crayfish
- 1 bouillon cube, crumbled
- 1/2 tsp salt

Bring 2 cups water to a boil in a pot over medium-high heat and add 1/4 tsp baking soda.

Add 8 oz rinsed fresh jute leaves to the pot and boil for 3 to 5 minutes until tender.

Transfer cooked leaves and liquid to a blender and pulse briefly until smooth.

Return the puree to the pot and place over low heat.

Stir in 1 tbsp rinsed fermented locust beans, 1 tbsp ground crayfish, 1 crumbled bouillon cube, and 1/2 tsp salt.

Simmer for 2 minutes while stirring constantly, then remove from heat.
