  • 2 cloves garlic cloves, smashed

  • 2 tbsp fresh chives, thinly sliced
  • 1/4 cup grated Parmesan cheese

    Bring a large pot of salted water to a boil. Add 1 head cut into florets cauliflower and 2 cloves smashed garlic cloves and cook 10 to 12 minutes until the cauliflower is very tender when pierced with a fork.

    Transfer the drained cauliflower and garlic to a food processor or high-powered blender. Add 1 cup full-fat cottage cheese, 2 tbsp unsalted butter, 1 tsp kosher salt, and 1/4 tsp freshly ground black pepper.
