Country Fried Steak and Gravy
Tenderized beef steaks double dredged and pan fried until golden brown, served with a rich peppered pan gravy.
Ingredients
- 4 steaks cube steaks, pounded thin
- 1.5 tsp kosher salt
- 1 tsp black pepper, ground
- 1.5 cups all-purpose flour
- 1 tsp paprika
- 1/2 tsp garlic powder
- 2 cups whole milk
- 1/3 cup vegetable oil

Season 4 steaks pounded thin cube steaks on both sides with half of the 1.5 tsp kosher salt and half of the 1 tsp ground black pepper.

Whisk 1.5 cups all-purpose flour, 1 tsp paprika, 1/2 tsp garlic powder, and remaining 1.5 tsp kosher salt and 1 tsp ground black pepper in a shallow bowl, then pour half of the 2 cups whole milk into a second shallow bowl.

Dredge each piece of 4 steaks pounded thin cube steaks in the flour mixture, dip into 2 cups whole milk, and coat in flour mixture again.

Heat 1/3 cup vegetable oil in a heavy skillet over medium-high heat until shimmering.

Fry 4 steaks pounded thin cube steaks for 3 to 4 minutes per side until golden brown and internal temperature reaches 145°F, then transfer to a plate.

Drain all but 2 tablespoons of pan drippings from skillet, set over medium heat, and whisk in 2 tablespoons of the remaining flour mixture for 1 minute.

Gradually whisk in remaining 2 cups whole milk and simmer for 3 to 5 minutes until thickened into gravy, then spoon over fried 4 steaks pounded thin cube steaks.
